Yerba mate (Ilex paraguariensis St. Hil.) es una especie vegetal con propiedades nutricionales y medicinales, de cuyas hojas secas trituradas se preparan infusiones. Se evaluó la actividad antibacteriana de extractos hidroalcohólicos secos de yerba mate elaborada, sobre bacterias de importancia en alimentos (Escherichia coli, Salmonella Enteritidis, Pseudomonas aeruginosa y Staphylococcus aureus), por métodos de difusión en agar. Se determinó la concentración inhibitoria mínima (CIM) y la concentración bactericida mínima (CBM). Se realizó un análisis fitoquímico preliminar y se cuantificó el contenido de polifenoles totales. Staphylococcus aureus y Salmonella Enteritidis fueron inhibidas por los extractos. El extracto hidroetanólico (60:40) mostró mayor capacidad inhibitoria. Staphylococcus aureus presentó mayor tamaño de halo de inhibición con CIM/CBM de 0,78/0,78 mg/mL. Se halló la presencia de taninos, flavonoides, saponinas y un contenido de polifenoles totales de 24,47 g EAG/100 g de muestra seca. Los extractos obtenidos podrían utilizarse como potenciales conservantes naturales en alimentos. Yerba mate (Ilex paraguariensis) is a plant species with diverse nutritional and medicinal properties, whose crushed dried leaves are made into infusions. The antibacterial activity of dried hydroalcoholic extracts of yerba mate elaborated on bacteria of importance in food has been evaluated (Escherichia coli, Salmonella Enteritidis,Pseudomonas aeruginosa and Staphylococcus aureus) by agar diffusion methods. The minimum inhibitory concentration and the minimum bactericidal concentration have been determined. Preliminary phytochemical analysis has been made and total polyphenols have been quantified. Staphylococcus aureus and Salmonella Enteritidis were inhibited by the extracts. The hydroethanolic extract (60:40) has shown greater inhibitory capacity. Staphylococcus aureus presented a greater inhibition halo size with MIC/MBC of 0.78/0.78 mg/mL. The presence of tannins, flavonoids, saponins and a total polyphenol content of 24.47 g EAG/100 g dry sample have been found. The extracts obtained could be used as potential natural preservatives in foods.
